Bishop's Crown chillies are a very unusual-looking variety of chilli originating in Barbados. Chilli pods resemble, yes you've got it, a Bishop's hat with their three distinct sides. These chillies are also sometimes known as 'Fryer's Hat' chillies and 'the Christmas Bell'. The wings of the pods are mild and sweet-tasting but the centre of the chilli pods are pretty hot.

Nice large bushy plant growing to over a metre, thick fleshed fruits about 7 cm long ripening from green to red if left. They tends to have more of a rounded end than a point. Widely used in Mexican cooking nearly always green, great stuffed with cheese and grilled or barbequed

Medium-hot peppers, especially good for hot sauces. Green then bright red at maturity. 6 to 8 inches long and 2 inches wide. Plants grow to 2 feet. 75 days to ripen. Heat level is 4. (Capsicum annuum)

Nice large bushy plant growing to well over a metre from the Assam region also called ghost chilli. Very crinkly fruits from a 4 cm wide top to up to 9 cm long fairly early ripening from green to orange/red, with the crinkly looking surface.

ely available fresh in green or red depending if they've been ripened on the bush, has an acidic tart flavour. Used in chilli sauces but main use is its powdered form cayenne pepper.
